This limited edition Parainema variety was grown in micro-lots in Capucas, Copán, a region of Honduras known for its vibrant coffee profiles and proximity to the cloud forest Celaque National Park. Grown at 1,800 meters above sea level, this bean offers notes of red berries, dried fruits, red wine, and floral honey—characteristics brought out by the natural method used to process after harvesting.
Producers Mabel Ortiz and Francisco Galeano, Odysea partners as well as Francisco’s parents, carefully processed this coffee in collaboration with their coffee cooperative, Umami. By allowing the coffee seeds to ferment inside the fruit for up to 30 days, they achieved a complex and rich cup. The farm, Finca Rio Colorado, is named for the two rivers that flow on either side, creating a lush oasis ideal for cultivating high-quality coffee.
This coffee is best brewed using a Chemex or other pour-over method.
